VEG. Recipes : Grilled Halloumi and Peppers

Grilled Halloumi & Pepper Skewers Serves 4

1 yellow and 1 red pepper (or any combination of peppers)
2 red onions
cherry or pomodorino tomatoes
40zs/113g halloumi cheese
Fry light spray oil
2 tsps/10mls dried mixed herbs
Finely chopped parsley to garnish (optional)
 
 
  1.  Prepare the ingredients: deseed and cut the peppers into bite sized pieces; peel and cut the red onions into wedges; cut the halloumi cheese into small squares.
  2. Thread the peppers, onions, toamtoes and cheese, alternately onto wooden or meatl skewers. [Note, if using wooden skewers, soak first in cold water to prevent burning.] Spray with the Frylight oil and sprinkle with the mixed herbs. Place on a barbecue or under a hot grill for 3 - 4 minutes each side, or until lightly browned at the edges.
  3. Remove from the heat and sprinkle with parsley and serve immediately.

 

I served mine with a baked potato, toped with soft cheese and sprinkled with paprika, and a pile of broad beans.
