VEG. Recipes : Cheesy Chip Bake

Cheesy chip bake     Serves 4    
 
 
2lbs/908g potatoes
2 red peppers
2 garlic cloves
4ozs/113g Cheddar cheese
Frylight
Salt & freshly ground black pepper
1 tsp dried mixed herbs
4 eggs
Chopped fresh parsley to garnish if liked
 
 
  1.  Preheat oven to 220°C/425°F/Gas 7. Peel the potatoes and cut into chips. Deseed the peppers and slice. Peel and finely chop the garlic and grate the cheese.
  2. Parboil potatoes for 5 -6 minutes, drain and place in a shallow ovenproof dish, spray well with Frylight. Season well.
  3. Add the peppers, garlic & herbs to the chips and combine. Make 4 wells in the mixture and break an egg into each one. Sprinkle over the grated cheese and bake for 20 minutes or until the eggs are set and the chips golden. Serve garnished with parsley.

 

*  I made mine in individual dishes and used 2 eggs each, as can be seen in the pic above.
