Parsnip and Apple Soup
 
 
Makes about 4 - 6 large servings.
Freezes brilliantly!
 
 
Ingredients
1 onion chopped
1 bag frozen parsnips (I used 2 large fresh ones)
2 Eating apples - skinned & chopped
1 Large potato
2 cloves garlic
1 heaped teaspoon Hot Curry powder
2 Vegetable stock cubes or some stock powder
Salt & black pepper
 
Method
Put everything in a big pan. Cover with water. 
Bring to the boil.
Simmer for approx 45 mins.
Puree in processor or liquidiser & eat!
 
Consistency can be adjusted by adding more water if required.
