Root Vegetable Biryani.
 
Cooking this delicious vegetarian dish in a single pot means that all of the flavours are retained.
 
Serves 4
 
 
1 onion
2 potatoes
2 sweet potatoes
1 swede
2 garlic cloves
4 carrots
4 parsnips
1 tblsp medium curry powder
1 tblsp chat masala *
12oz/340g dried rice **
Freshly chopped coriander
 
 
�?/STRONG> Prepare the vegetables: peel and chop the onion, peel and crush the garlic, peel and slice the carrots and parsnips. Place in a very large pan and cover with 1½ pints of boiling water and bring to the boil and simmer for 15 minutes.
 
�?/STRONG> Add the spices, stir well and cook for a further 2 minutes. Add the rice and mixing it in well bring back to the boil. Cover and cook for 20 minutes until the vegetables are tender, the rice cooked, and the liquid has been absorbed.
 
�?To serve, divide between four serving bowls, and sprinkle with the coriander.
 
* If you can't find chat masala, use garam masala instead.
 
** I used brown rice and adjusted the cooking time accordingly.
