Tatertot casserole is very simple to make....no great cooking skills required..lol  People make it lots of different ways.  I do it like this..
 
2 bags tatertots
1 lb GroundBeef ( or turkey, pork.etc.)
2cans cream of mushroom soup
Shredded cheese ( i use colby-jack, but you can use any type of cheese you want)
 
brown meat, then drain grease
place tatertots along bottom of caserole dish,
 mix browned meat with mushroom soup and then pour evenly over tatertots
top with shredderd cheese
 
Bake at 350 for about 30 mins or until tatertots are tender and cheese is slightly browned.

So incredibly fattening - and it sounds delicious! You are used to cooking for a bunch of guys, Dawn, but I'd be adding lots of veggies to that. Cook up thin sliced onions and carrots with the meat, add diced green peppers, or frozen peas and or corn (actually a bag of frozen mixed veg can be the cheapest source of high nutrition veggies in the winter) - whatever is cheap or in season here. I'm allergic to mushrooms so I would be using cream of celery or cream of cheddar soup. YUM!!

I think there are so many variations to this it could be a family favorite for everyone!
