CUTTING CORNERS : Casseroles!

Casseroles are about the BEST way to go when cutting your budget, and you can use most any type (brand) of ingredients and still make things taste good lol
 
Our favorites are: Tuna Casserole, Enchalada Casserole, Franks and Beans and Chicken Casserole.
 
Try some cheap cuts of meat, Brisket has become a favorite in our house, and with a crock pot you can make so many things quick and don't have to worry about heating up the house in the summer!
 
We LOVE: Bean Soup, Brisket, Chili, Chicken and Dumplings, Ribs, Roast...
 
Just find the meat sales and stock up if you can, if it's a tougher cut of meat, put it in the crockpot earlier to make it tender. For me, if I put it in at 8 am by dinner (around 4) it is fork tender and wonderful!  Walmart usually has bagged chicken (thighs, legs and breast) pretty cheap so we stock up on that, yes, you get tired of chicken after awhile so we will throw in some brisket or a roast in now and again, and Eye of Round is REAL tender, might not be as flavorful as expensive steaks but this is a GREAT marinade if you would like to try it:
 
1/2 C Soy Sauce
2    T Sugar
2    C Water
1    T Garlic (or two cloves crushed)
1    Green onion sliced thin
 
Mix all ingredients until sugar is dissolved and place meat in marinade, a couple ours is good, over night and you won't want to stop eating it! This works for just about any type of meat and especially great with tough cuts of meat :o)  Also great for the grill!!! Oh now my mouth is watering lol
 
Another GREAT dish that is inexpensive and oh so good is Egg Fu Young. Just mix whatever you like in the eggs then scoop into oil and fry until golden brown. Then make the gravy and you are set!  We like to dice up pork (any kind is fine) and brown it let it cool and then add it to the eggs along with green onion and mushrooms, mix it up like you would for an ommlet and then just scoop it into the oil.

Ooh man.. if you like mac & cheese.. buy the elcheapo with the elbow noodles.  Here is a great recipe, I fell inlove with:
In a 13x9 pan, greased
2 boxes mac & cheese
1 bell pepper
2 cans kernal corn
2 cans cream corn
shredded cheese ( I use mexican blend)
butter
milk (I use 2%)
You can add whatever else you want .. onion.. other pepper..
Don't drain your cans of corn..pour it all in
On the butter and milk.. I use about 5 tblsp and milk I fill it to about an inch to the top of the pan (use as much as u like)
mix all ingredients in pan (only half of bag of shredded cheese)
put in oven @ 350
stir half way through, and add rest of shredded cheese
cooks about 45 mins
done when your noodles are done and rest of cheese is meled

We have a few casseroles we make.
Mexican Chicken Lasagna
 
1 Chicken Fryer boiled, skined and taken off bone
1 Large Can of Cream of Chicken soup
1 Large Can of Refried Beans
1-2 Packets of Taco Seasoning (depending on how spicey you want it)
1 Large Container of Sour cream
Mixed Cheese (colby/jack or what ever kind you like)
Corn Totillas
1 Can of Black olives (optional)
 
Take and mix cream of chicken soup, chicken, refried beans and taco seasoning in a bowl
In a Large casserole dish take and place enough corn totillas on the botton to cover it and then apply a layer of chicken mix, sour cream, black olives, and then cheese repeat process of layering untill the pan is full for final layer top with corn totillas and last with cheese place in oven and heat till cheese is melted and warm completely thru.
 
You can change this recipe to include really what ever you want. Rotell, ground beef, prok, chicken,turkey or what ever meat you want and if you are not a big fan of meat replace it with a veggie and it taste really good and your family will think you spent alot of time.
If you dont have a large family to feed cut down the amounts you use or cook a large batch and freeze half of it.
