No Bake Sugar Free Cheesecake

(debbi's recipe)

this is really good for something creamy and sweet.  and it is not too heavy or loaded with calories.

 

Cheesecake:

1/4 cup boiling water

1 (3oz) box sugar-free lemon Jello

2 (8oz) pkgs. fat free cream cheese

1/2 cup splenda

1/2 cup sour cream

1/3 cup heavy whipping cream

Topping:

1 cup heavy whipping cream

1/4 cup splenda

 

Mix lemon sugar free jello with boiling water till dissolved.  Set aside.  In a separate large mixing bowl, blend cream cheese with 1/2 cup splenda, sour cream and 1/4 cup heavy whipping cream.  Beat until very smooth.  Add gelatin mixture & beat again till thoroughly mixed and smooth.  Pour into a Pyrex pie plate sprayed with cooking spray.

 

For the topping:

Mix 1 cup heavy whipping cream with 1/4 cup splenda and billow over top of cheesecake.  I also add a drop or two of vanilla to mine.

 

Refrigerate a couple hours.  This really sets up faster than that.  I usually make mine right before I cook dinner, and by the time we're finished eating it is ready.  If it's not the consistency you like, stick it in the freezer for about 10 minutes.

 

(this only has 2.5 carbs per serving. and makes 10 servings.)
