Chili Seasoning Mix recipe

2 tablespoons chili powder
2 teaspoons cumin
1 teaspoon oregano, powder
1 teaspoon onion powder
1/2 teaspoon garlic powder

Mix all ingredients; use in recipe below, or
store in airtight jar in cool place. Makes 1/4 cup.

Chili

1/2 large yellow onion, diced
2 large cloves garlic, minced or chopped
1 jalepeno, seeds removed, and finely chopped
2 lbs ground beef, or 2 bags morningstar vegetarian crumbles

1 can light kidney beans, drained and rinsed
2 can red beans, drained and rinsed
2 sm cans tomato sauce
2 sm cans water
1 - 14 oz can diced tomatoes, (hunt's fire roasted) undrained
1/4 cup chili seasoning mix, recipe above
1/4 tsp cayenne pepper, optional

cook the onion, garlic, jalepeno and
crumbles till onion is done.
(if using hamburger, cook till pink, then drain).
Stir in remaining ingredients, and simmer to blend flavors.
i added an additional few sprinkles of chili powder, cumin, salt and pepper to taste.
you can cut recipe in half, and use as much of the 1/4 c chili seasoning as you like.

To make Chili Mac, omit beans and add 2 cups cooked macaroni.
