Debbi's White Chili

3 Cans (or 1 jar) of Great Northern White Beans, drained
1 Medium Onion Chopped
2 Garlic Cloves (Chopped)
1 Tablespoon olive oil
4 cooked, boneless skinless chicken breast halves, chopped OR 2-3 cups chopped cooked chicken (rotisserie chicken)
2 cans (14 ounces each) chicken broth
1 4-oz Can Chopped Green Chilies
2 Teaspoons dried Oregano
2 Teaspoons ground Cumin
1 1/2 teaspoons Cayenne Pepper (or to taste)
1 cup shredded Monterey Jack cheese (or more if you like)

chopped jalepeno pepper, optional

In a large saucepan or dutch oven over medium heat, cook the onions and garlic in oil for 10 mins or until onions are tender.  Add chicken, chicken broth, green chilies, cumin, oregano and cayenne.  bring to a boil.

Reduce heat to low.  With a potato masher, mash one can of beans until smooth.  Add to saucepan.  Add remaining beans to saucepan.  Simmer for 20-30 minutes or until heated thoroughly.  Top each serving with cheese and jalepeno pepper if desired.  A dollop of sour cream is also good on top.

makes 10 servings or 2 1/2 quarts.
