Deb that cocktail sounds yummy. I just added Cranberry juice to the grocery list so we can give it a try.
Here is a cake recipe I tried yesterday. It was so easy to make and really good. I think next time I will use a little more powdered sugar though with the root beer for the glaze. It seemed a little thin but tasted really good.
ROOT BEER CAKE
Ingredients:
1 box (18.25 oz.) YELLOW CAKE MIX
1 can (12 oz.) ROOT BEER
1/4 cup CANOLA OIL
3 EGGS
1/2 cup POWDERED SUGAR
3 Tablespoons ROOT BEER SODA
Directions:
1. Heat oven to 350°F. Grease and flour a 10-inch Bundt pan; set aside.
2. Combine the cake mix, can of root beer, oil and eggs in a medium bowl. Mix the cake batter according to the package directions, pour into the prepared pan and bake for 35 to 40 minutes, until a toothpick inserted in center comes out clean.
3. Cool cake 15 minutes in pan before inverting onto a wire rack to cool. Poke holes in the cake every 2 inches with a bamboo or metal skewer.
4. Combine the powder sugar and the 3 Tablespoons Root Beer in a small bowl. Beat the sugar glaze with a fork until smooth. Pour the root beer glaze over the cake.
