Gina's Collard Greens Recipe courtesy Gina Neely
on Paula Deen show

5 bundles collard greens
3 cups water
3 large smoked ham hocks
1 cup sugar
1/2 cup salt
3 tablespoons crushed red pepper flakes (less if you don't
like spicy)

Thoroughly wash collard greens, be sure to pull leaves apart and remove any sand & remove and discard veins.  In a medium saucepan, bring 3 cups of  water to a simmer. Place smoked ham hocks in water and cover. Cook ham hocks until slightly tender, but not all the way cooked.  In another large
stockpot of boiling water, add the salt, sugar & red pepper flakes.  Next add the hamhocks and their water to the pot of boiling water.  Add collard greens.  Cover and cook greens for 2 1/2 to 3 hours until water reduces.
