Mary Bess�?Eggplant Casserole
1 eggplant, peeled, cubed and boiled till soft
½ stick butter, chopped
1 �?16 oz can whole peeled tomatoes or 1 can rotel if you like spicy
1 egg beaten (2 if big eggplant is used)
3 slices bread torn up colby or velveeta cheese
Grease casserole & add eggplant, chopped butter, tomatoes and egg and stir up. Fold in torn up bread. Stick chunks of cheese down in casserole and on top. Bake at 350 degrees for about 30 minutes.
