i pint of plump fresh oysters with liquor(save liquor)
5 cups of whole milk,(not low fat)
1 cup finely crushed crackers
1/4 cup butter(not margarine)
salt and pepper to taste
method,, strain the liquor from the oysters, and remove any bits of shell,,heat oysters and liquor slowly,just until the edges curl or ruffle,,meanwhile,,in another pan put the milk,,a small amount of salt and pepper(to taste)and fine cracker crumbs that have been flattened with a rolling pinheat slowly just to below boiling point,,,do not allow to boil,,,add heated oysters and liquor,,blend ,,add butter,stir into mixture gently,,as soon as the butter has melted,,remove from stove and serve ,, sprinkle with a little parsely..len
