This has been a favourite of mine for day trips for some years. Make the spegg salad the night before so it is nice and cold from the fridge.
I use 10 large eggs and 3/4 of a medium white onion. Boil the eggs as for egg salad, once boiled mash with a potatoe masher...add butter while you mash for flavour and texture. Mix in the diced onion and add mayonaise as you would normaly
In another bowl mash a can of spam. Add the mashed spam to the egg salad and mix in well
Cover and put in fridge to cool. I like this spegg salad with a slice of cheese in the sandwich.
