This recipe is a twist of teriyaki and produces a wonderfully sweet and different fish dish. Any firm fish (haddock, halibut or salmon for example) may be used as long as it is 3/4 to an inch thick. Personally, I prefer it on salmon!! Another tip: marinate as long as possible, preferably overnight.
Brown Sugar Baked Cod
6 cod fillets (or whichever type fish you are using)
1/2 cup brown sugar, packed
4 Tablespoons melted butter
3 " soya sauce
2 " fresh squeezed orange juice
2 " dry white wine or water
1. Combine all ingredients, except fish in a small bowl. Place fish in a shallow glass baking dish that holds the fish snugly in one layer.
2. Pour marinade over fish and marinate in refrigerator for as long as possible.
3. Bake in preheated 400 oven (middle rack)covered for 15-20 minutes basting but not turning.
Garnish with orange slices and parsley. Serve with wild rice. Quick & easy and soooo good! Even tastes better the next day.
