Fruit Spongy Puds
Ingredients
Preparation time: 10 minutes
Cooking time: 5 minutes
Serves: 4
1 cup canned or stewed fruit, chopped up i.e. peaches or pears
4 tablespoons jam
50 g butter
1 egg
¼ cup Chelsea Caster or White Sugar
1 cup self raising flour
½ cup low fat milk
Method
Spray 4 straight sided coffee mugs with non stick
baking spray.
Divide the chopped fruit equally between the
mugs.
Spoon a tablespoon of jam over the fruit.
Place the butter in a medium sized microwave proof bowl.
Melt on high power for 30 �?40 seconds.
Beat in the egg and caster sugar then mix in the
flour and milk. Spoon the mixture over the fruit and jam.
Place all four mugs in the microwave and cook together
on high for 3 ½ - 4 minutes.
Rest the puddings for
2 �?3 minutes in the mugs then tip out onto
individual plates.
^Serve with fruit yoghurt,
whipped cream or ice cream.
Annies remarks : I have tried this a long time ago .
excellent for small serves and small quantities of fruit.
I prefer fresh fruit  to canned . ^Can add custard instead .

Strawberries
Strawberries and Cream
Servings: 4
10 reduced fat vanilla wafers, crushed;
1/2 c.fat free cream cheese or use low fat;
6 tblspns sugar;
3 tblspns skim milk;
1 tblspn orange juice;
1 tspn orange flavor liqueur (optional);
3 cups fresh strawberries, sliced .
Crush wafers in a zip lock bag by using a
rolling pin or use a blender or food processor.
In a large bowl, combine cream cheese. sugar. milk.
orange juice . liqueur and beat until smooth.
To serve, divide strawberries into large dessert dishes.
Top with about 1/4 cup cream mixture and sprinkle
each with vanilla wafer crumbs.

Strawberry Cream Fruit Dip
1 c. mayonnaise
1 c. mashed strawberries or red raspberries
1/3 tbsp. confectioners' sugar
3 tbsp. lemon juice
1 c. whipped topping
Mix first four ingredients together.
Fold in whipped topping.
Serve with fresh fruits.

Strawberry Tipple
1 cup or more of sliced and hulled ripe strawberries
2 tsps white sugar.
2 tsps Cointreau  Liquer.
Put all strawberries in dessert dish ,
Cover with sugar , mix well  then drizzle over with
Cointreau ,leaving them to soak for 2-4 hrs. in refrigerator .
You can turn them occasionally so all get the benefit
of the sugar and when ready to serve as dessert ,
will be sweet and a great taste for all concerned .
 
Coffee may be served after also .
with a hint of the Liquer in it . *French style .!
 
* Run the liquer over the back of your spoon as the
hot coffee is near to being served .

To give your dessert a touch of class.
Creme Fraiche may be added also on the side
with a whole strawberry on top and a mint leaf.

 
Annie's Delight. Sure is a great way for eating those overipe fruit
yet making a great dessert with class.
