SIMPLE CARAMEL CAKE     
2 1/2 c. sifted cake flour
2 1/2 tsp. baking powder
1 tsp. salt
1/2 c. shortening
1 tsp. vanilla
1 1/4 c. sugar
3 eggs
1/4 c. caramel syrup
3/4 c. water
Sift together flour, baking powder, and salt. Cream shortening; beat in sugar gradually. Add vanilla and eggs, one at a time, beating well after each addition.
Blend in syrup. Add dry ingredients alternately with water. Beat smooth after each addition. Bake in two waxpaper lined 9 inch pans. Bake at 350 degrees F. for 30 to 35 minutes.
To make caramel syrup: Heat 2/3 cup sugar in heavy skillet over low flame. Stir constantly until sugar is melted and a golden brown. Remove from heat, slowly add 1/3 cup boiling water. Return to heat and stir until sugar dissolves. Cool. Frost the cake with caramel icing.

A SIMPLE CAKE     
1/2 c. cooking oil
2 1/2 c. flour
4 tsp. baking powder
1 tsp. salt
1 1/2 c. sugar
1 1/4 c. milk
3 eggs
2 tsp. vanilla
Mix oil, sugar, and eggs together. Add the dry ingredients, vanilla and milk and mix until smooth. Pour into a greased and floured 9x13 inch pan and bake at 350 degrees for about 30 minutes or until a toothpick inserted comes out clean.

SIMPLE OLD STANDBY RHUBARB CAKE      
1 1/2 c. brown sugar
1/2 c. butter
2 eggs
1 c. buttermilk or sour milk
1 tsp. soda
Pinch of salt
2 c. sifted flour
1 1/2 to 2 c. rhubarb, diced small
1/2 c. sugar
1 tsp. cinnamon
Cream shortening (butter) and sugar. Beat in eggs. Add milk and dry ingredients. Mix well. Pour into greased and floured 9x13 pan. Bake 350 degrees 30 minutes or until done.
Top with 1/2 cup of sugar and 1 teaspoon cinnamon mixed. Sprinkle over unbaked batter.

SIMPLE STRAWBERRY CAKE     
1 pkg. Martha White Two Cup all-purpose flour
1/2 tsp. soda
1/2 tsp. salt
3 eggs
1 c. vegetable oil
1 c. sugar
1 (3 oz.) pkg. strawberry gelatin
1/2 c. buttermilk
1 (10 oz.) pkg. frozen strawberries, thawed
Preheat oven to 350 degrees. Combine flour, salt, and soda. Set aside. Beat eggs in large mixing bowl. Add oil, sugar, and gelatin, and buttermilk. Stir vigorously until well blended. Add flour mixture and blend. Drain 1/2 cup juice from strawberries (reserve for icing). Fold strawberries into batter. Pour batter into pan. Bake 25 to 30 minutes or until golden brown.
Strawberry Icing: Combine 1/4 cup butter (soft) and 1 pound confectioners' sugar. Add 1/3 to 1/2 cup strawberry juice until desired spreading consistency. Beat until creamy.

SIMPLE CHEESE CAKES     
2 (8 oz.) pkgs. Philadelphia cream cheese
3/4 c. sugar
2 tsp. lemon juice
1 tsp. vanilla
2 eggs
Vanilla wafers
Heat oven to 350 degrees. Mix ingredients well. In cupcake pans with papers add a vanilla wafer to the bottom of each paper. On top of vanilla wafer add the mixed ingredients to about 1/3 of the paper. Bake 15-20 minutes or until sets. Cool well. Top with cherry pie filling. Makes 24.

SIMPLE WHITE CAKE     
1/2 c. shortening
1 tsp. vanilla
1 1/2 c. sugar
2 1/4 c. sifted flour or 2 1/4 c. sifted cake flour
2 1/2 tsp. baking powder
1/4 tsp. salt
1 c. milk
3 egg whites
Mix and bake in greased and floured cake pans at 350 degrees until it bounces back in the middle.
CARAMEL FILLING:
1 c. sweet milk
3 c. sugar
1/2 c. butter
1 tsp. vanilla
1/4 c. brown sugar
1/4 c. boiling water
Add boiling water and brown sugar; cook until sugar and boiling water is well blended and all lumps are gone. Put all ingredients in large boiler. Cook until it leaves the spoon. Set in cold water beating until it becomes creamy and thick.

Diet Coke Cake
1 box Betty Crocker Devils Food cake mix
10 ounces of Diet Coke
Mix together, adding more or less Diet Coke to get a nice batter.
Spray a 9X13" (or larger) baking pan with non-stick spray, and lightly flour.
Bake at 350 degrees until it springs back in the center when touched.
Could also use this recipe with other diet sodas/cake mixes for example:
Deep Chocolate cake mix/ can of diet orange soda
diet ginger ale/strawberry cake mix
diet mountain dew/lemon cake mix

Everyday Cinnamon Tea Cake
 
Ingredients:
 60g butter
1 tsp vanilla essence
½ cup sugar
1 egg
1 cup SR flour
1/3 cup milk
15g extra butter, melted
1 tblsp (preferably castor) sugar, extra
½ tsp ground cinnamon 
 
Method:
 Grease a round cake tin and line it with greaseproof paper.
Beat the butter and vanilla together until white and creamy,
add the sugar and continue beating.
Add the egg and beat a bit longer.
Add half the flour and half the milk, mix well, then beat in remainder.
Don't over beat.
Spoon the mixture into the cake tin and bake in a moderate oven
for about 25 minutes or 'til golden (cake should shrink slightly from
sides of pan. If you're not sure - poke a skewer into the middle and
it should come out dry).
Turn cake out onto serving plate. Brush the top immediately with
the melted butter and sprinkle with the cinnamon sugar.
