Aunty Geila's Banana Nut Cake
1/2 cup butter -- room temperature
1 cup sugar
2 eggs
2 cups unsifted cake flour
1 teaspoon baking powder -- heaping
1 teaspoon baking soda
1 cup milk
1/4 teaspoon vanilla
2 ripe bananas -- mashed
1 cup chopped walnuts
1 recipe butter frosting -- below
Butter Frosting
5 tablespoons all-purpose flour
1 cup milk
1 cup butter -- room temperature
1 cup sugar
1 teaspoon vanilla
Preheat oven to 350 degrees. In bowl of electric mixer cream butter with sugar. Add eggs and cream well. In separate bowl combine flour, soda and baking powder. Alternately add milk and flour combination to sugar mixture. Fold in vanilla, bananas and walnuts. Grease a 13 x 9-inch baking pan (not pyrex) and bake 30 to 35 minutes.
Butter Frosting
In saucepan whisk flour and milk together. Bring to a boil and cook stirring constantly until very thick. Cool. Cream together butter, sugar and vanilla. Add to cooled flour mixture and beat 20 minutes. Spread over cooled cake.
Cake serves 10 to 12.

Chocolate Banana Cake
1/2 cup margarine, softened
1 1/4 cups brown sugar
2 eggs
3 squares unsweetened chocolate, melted
2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon baking powder
1 1/2 cups mashed, ripe bananas
1/2 teaspoon vanilla
Cream margarine and brown sugar until light and fluffy. Add eggs one at a time. Beat thoroughly after each. Stir in the cooled melted chocolate. Sift dry ingredients together and add to the batter alternately with the mashed bananas; stir in vanilla. Pour into 2 greased and floured 9-inch layer cake pans. Bake in preheated 350 degree oven for 35 to 40 minutes, until cake tests done. Frost with a fluffy white frosting.
 
Banana Cupcakes
1/2 cup shortening
1 teaspoon vanilla
1 cup sugar
2 eggs
2 1/4 cups sifted cake flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1 cup mashed ripe bananas, about 2 large ripe bananas
1/4 cup buttermilk
Cream shortening and vanilla; add sugar gradually, beating until light and fluffy. Add eggs one at a time, beating well after each addition. Sift together the dry ingredients; add alternately with banana and milk to the creamed mixture, beating well after each addition. Fill greased and floured or paper lined muffin cups about 1/2 full. Bake at 375° for 18 to 20 minutes, or until done. Cool and frost as desired. Makes about 24 to 30 cupcakes

Banana Nut Bread  from Ann
Makes 1 loaf
 
1 3/4 all-purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
2/3 cup sugar
1/3 cup shortening
2 eggs
2 tablespoons milk
1 cup mashed ripe bananas
1/4 cup chopped nuts
 
Stir together flour, baking powder, soda, and 3/4 teaspoon salt. Set aside. In a mixer bowl beat sugar and shortening with electric mixer till light, scraping sides of bowl often. Add eggs, one at a time, and the milk, beating till smooth after each addition. Add flour mixture and banana alternately to creamed mixture, beating till smooth after eachaddition. Fold in nuts. Turn batter into a lightly greased 8x4x2-inch loaf pan. Bake in a 350 degree oven for 60 - 65 minutes or till a wooden pick inserted near center comes out clean. Cool in pan 10 minutes. Remove from pan; cool. For easier slicing, wrap and store overnight.

 
Surprised Banana Cake  from Ann
 Prep Time: 30 Minutes
Cook Time: 30 Minutes  Ready In: 1 Hour
Yields: 24 servings
INGREDIENTS:
1 cup white sugar
1/2 cup  butter
2 eggs
4 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup chopped walnuts.
1/4 chopped cashews.
1 teaspoon vanilla extract
DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C).
Grease and flour one 9 x 13 inch cake pan.
Cream together the butter [or margarine] and the sugar.
Add eggs, bananas, flour, soda, salt, nuts, and vanilla.
Mix thoroughly and pour batter into the prepared pan.
Bake at 375 degrees F (190 degrees C) for 30 minutes.
 Cool and frost cake with pale lemon icing .

2-3 eggs

2 1/2 teaspoons baking powder
1&1/2 cups mashed ripe bananas, about 3 large ripe bananas
1/2 cup buttermilk
Cream shortening and vanilla; add sugar gradually, beating until light and fluffy. Add eggs one at a time, beating well after each addition. Sift together the dry ingredients; add alternately with banana and milk to the creamed mixture, beating well after each addition. put in lined grease proof expandable  tin @ 350 oF. for
 1- 1/2 hrs until cake springs back. rest then ice . cut when cold
