Chocolate Banana Cake 1/2 cup margarine, softened 1 1/4 cups brown sugar 2 eggs 3 squares unsweetened chocolate, melted 2 cups all-purpose flour 1/2 teaspoon baking soda 1/4 teaspoon salt 1 teaspoon baking powder 1 1/2 cups mashed, ripe bananas 1/2 teaspoon vanilla Cream margarine and brown sugar until light and fluffy. Add eggs one at a time. Beat thoroughly after each. Stir in the cooled melted chocolate. Sift dry ingredients together and add to the batter alternately with the mashed bananas; stir in vanilla. Pour into 2 greased and floured 9-inch layer cake pans. Bake in preheated 350 degree oven for 35 to 40 minutes, until cake tests done. Frost with a fluffy white frosting. Banana Cupcakes 1/2 cup shortening 1 teaspoon vanilla 1 cup sugar 2 eggs 2 1/4 cups sifted cake flour 1/2 teaspoon baking soda 1/2 teaspoon salt 2 1/2 teaspoons baking powder 1 cup mashed ripe bananas, about 2 large ripe bananas 1/4 cup buttermilk Cream shortening and vanilla; add sugar gradually, beating until light and fluffy. Add eggs one at a time, beating well after each addition. Sift together the dry ingredients; add alternately with banana and milk to the creamed mixture, beating well after each addition. Fill greased and floured or paper lined muffin cups about 1/2 full. Bake at 375° for 18 to 20 minutes, or until done. Cool and frost as desired. Makes about 24 to 30 cupcakes

Banana Nut Bread from Ann Makes 1 loaf 1 3/4 all-purpose flour 1 1/4 teaspoons baking powder 1/2 teaspoon baking soda 2/3 cup sugar 1/3 cup shortening 2 eggs 2 tablespoons milk 1 cup mashed ripe bananas 1/4 cup chopped nuts Stir together flour, baking powder, soda, and 3/4 teaspoon salt. Set aside. In a mixer bowl beat sugar and shortening with electric mixer till light, scraping sides of bowl often. Add eggs, one at a time, and the milk, beating till smooth after each addition. Add flour mixture and banana alternately to creamed mixture, beating till smooth after eachaddition. Fold in nuts. Turn batter into a lightly greased 8x4x2-inch loaf pan. Bake in a 350 degree oven for 60 - 65 minutes or till a wooden pick inserted near center comes out clean. Cool in pan 10 minutes. Remove from pan; cool. For easier slicing, wrap and store overnight. Surprised Banana Cake from Ann Prep Time: 30 Minutes Cook Time: 30 Minutes Ready In: 1 Hour Yields: 24 servings INGREDIENTS: 1 cup white sugar 1/2 cup butter 2 eggs 4 ripe bananas, mashed 2 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 1/4 cup chopped walnuts. 1/4 chopped cashews. 1 teaspoon vanilla extract DIRECTIONS: Preheat oven to 375 degrees F (190 degrees C). Grease and flour one 9 x 13 inch cake pan. Cream together the butter [or margarine] and the sugar. Add eggs, bananas, flour, soda, salt, nuts, and vanilla. Mix thoroughly and pour batter into the prepared pan. Bake at 375 degrees F (190 degrees C) for 30 minutes. Cool and frost cake with pale lemon icing . |

Sift together the dry ingredients; add alternately with banana and milk to the creamed mixture, beating well after each addition. put in lined grease proof expandable tin @ 350 oF. for 1- 1/2 hrs until cake springs back. rest then ice . cut when cold |
