Idiot Proof Meal
Preparation Time:  1 minute 
Cooking Time:  2 minutes 
Serves:  1
Ingredients
1 potato
Ready-made coleslaw
Sour cream or chilli sauce
 Method
Nuke the spud until tender.
Split it open and pile in the ready-made coleslaw.
Add a splodge of sour cream or a splash of chilli sauce
 if you’re feeling adventurous.

Potato H T & C
Preparation Time:  2 minutes 
Cooking Time:  5 minutes 
Serves:  1
Ingredients
1 potato
1 tomato, chopped
Cheese
Ham
Method:
Nuke the spud until tender.
Split it open and shove in the ham, chopped tomato and cheese.
You can even grill it if you’re not in a hurry

Pasta Potato
Preparation Time:  1 minute 
Cooking Time:  7 minutes 
Serves:  1
Ingredients
1 potato
Spaghetti sauce
Grated cheese
 Method
Nuke a spud for 5 minutes or bake it until it’s tender.
Slop on some spaghetti sauce, any kind you like will do.
Cover with some grated cheese.
Slide it under the griller for a couple of minutes. Simple.

Mexicana Potato

Preparation Time: 2 minutes
Cooking Time: 6 minutes
Serves: 1

Ingredients

1 potato
Spicy Mexican dip
Cheese
Seasoning

Method

  1. Nuke a spud for 5 minutes or bake it until it’s tender.

  2. Split it and spoon on some spicy Mexican dip or other leftovers from the fridge.

  3. Chuck on a little tangy cheese and chuck it under the griller.

  4. Now bring out the Mexican in you with just a few shakes of your fave hot stuff.

  5. Get stuck into a little Mexican.

Potato and Egg Scramble
Preparation Time:   10 minutes 
Cooking Time:   10 minutes 
Serves: 4
Ingredients
8 medium eggs, lightly beaten
4 small potatoes, grated
1/4 cup milk
Salt and pepper
2 tblspn chopped chives
 Method
Microwave grated potato for 3 minutes, mixing after each minute.
Combine eggs and milk in a large bowl. Add potato and chives and season with salt and pepper. Mix well.
Microwave on high for 3 minutes, mixing well with a fork after each minute. Microwave for a further 30 seconds if required.
Fold together until cooked through. Serve with hot toast.

this one is a little more difficult
Potato and Sausage Hotpot
Preparation Time:   25 minutes 
Cooking Time:   45 minutes 
Serves: 4
Ingredients
4 large potatoes, peeled and diced
1 leek, sliced
2 tblspn oil
500g chipolata sausages
2 tblspn tomato paste
1 tblspn chopped fresh sage
1 tblspn chopped fresh basil
400g chopped tomatoes
500ml chicken stock or water
Salt and pepper
 Method
Fry leek in the oil for 5 minutes.
Add the sausages and fry for a further 5 minutes or until brown.
Stir through tomato paste and chopped tomatoes..
Pour in the stock, stir well and season.
Add the potatoes. Cover and simmer for 30 minutes.
Stir through fresh herbs just before serving.

Potato Nests
Preparation Time:   20 minutes 
Cooking Time:   30 minutes 
Serves: 4
Ingredients
1kg potatoes, peeled, cooked and mashed
1 tblspn milk
1 tblspn butter
1 egg
600g low-fat beef mince
1 medium onion, finely chopped
1 clove garlic, crushed
2 tblspn tomato paste
1 tspn fresh basil,chopped
1 x 400g can chopped tomatoes
100g button mushrooms, sliced
1 small zucchini, grated
Salt and pepper
 Method
Beat milk, butter and egg into the mashed potatoes and season with salt and pepper.
Place the mixture into a piping bag and pipe “nests�?on a greased or non-stick baking tray.
Brown under the grill or in a hot oven (220 degrees) for approximately 10 minutes or until golden. Keep warm.
In a large pan, fry the onion, garlic and mince until browned. Add all other ingredients and simmer for 20 minutes.
Spoon the mixture into the nests and serve.
