Hedgehog slice.
24 Hedgehogs
Ingredients
125 g unsalted butter
1 cup icing sugar
2 tablespoons cocoa
1 egg, lightly beaten
1/4 cup coconut
2 cups Marie biscuits, broken into pieces (for Australians)
or graham crackers, broken into pieces (for Americans)
1/2 cup hazelnut
Icing
125 g dark chocolate
125 g milk chocolate
1 tablespoon Copha
Directions
Melt the butter in a large saucepan over a medium heat.
Remove the pan from the heat, and stir in the sifted icing
sugar and cocoa, and mix well.
Stir in the beaten egg, and return the pan to the heat and
stir until the mixture boils.
Remove the pan from the heat and stir in the coconut,
biscuit pieces and nuts. The biscuits are generally broken into
pieces about the size of a hazelnut,
but some larger pieces is fine, and the pieces certainly don't
have to all be the same size!
Spoon the mixture into a baking paper lined 18cm x 28cm
(approximately 7" x 11") slice pan and press down firmly.

Icing the Hedgehogs: Melt the dark chocolate, milk chocolate
and copha together in a microwave-safe bowl or jug in a
microwave oven on a Medium setting for approximately 2 minutes;
stir well, pour - and spread evenly - over the hedgehog base.
Chill to set.
Once chilled, cut into 24 slices. Or larger or smaller slices if you wish!
Notes: For extra flavour, add 1/4 cup of sultanas.

Cornflake & Raisin Biscuits
[Hedgehogs ]
Ingredients

1 cup Chelsea White Sugar
2 eggs
125 g butter
1 teaspoon vanilla essence
2 ½ cups cornflakes
2 ½ cups flour
1 cup seedless raisins or sultanas

Method

Preheat oven to 180°C. Line 2 oven trays with baking paper or
spray with non stick baking spray.

Place sugar, eggs, butter and vanilla in a food processor and mix until creamy.
Add the cornflakes and flour to the food processor and mix. Add the raisins and,
use the pulse button to just quickly mix them in. Don’t over process our you will
chop up the raisins too small.

Place teaspoonfuls of the mixture on the tray, allowing
a little room between for spreading.
Dip a fork in cold water and press the biscuits flat.
Bake for 12 �?15 minutes until golden brown.
Cool on a wire rack and store in an airtight container.


Preparation time: 10 minutes
Cooking time: 15 minutes
Makes: 50 biscuits

Awana Ranger Cookies or Ranger Biscuits
 
Oven at 350*F  10-12 minutes - makes 4 or 5 dozen
 
1 Cup butter
1 Cup brown sugar
1 Cup white granulated sugar
2 beaten eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon salt
2 Cups shredded cocoanut
2 Cups flour
1 teaspoon baking soda
2 Cups rolled oats  (Here we have Quaker Oats)
 
Cream butter and sugars
Add eggs and vanilla
Sift together flour, baking soda, baking powder and salt
Add dry ingredients to egg mixture gradually.
Stir in rolled oats and cocoanut.  Mix thoroughly
Form into small balls (1/2 inch diameter),
place on greased cookie sheet, approximately 2 inches apart
because they will spread out.
Press ball with a glass bottom that's been dipped in sugar.
 
Bake at 350* F for 10-12 minutes. 
Cool on clean newsprint.  May be frozen.
