Vegetables:
 Carrottes Vichy-[Glazed.]
 1&1/2 lb. Young Carrots
 1 tbsp Butter
 1/2 tsp Sugar
 Freshly Ground Pepper & Salt
 1tbsp chopped parsley or mint.
 Scrub carrots.then slice in fine rounds.Melt butter in pan with well fitting lid.
 Toss carrots in & pour little water to nearly cover them.Add sugar & seasoning,
 bring to boil.Cover with lid.Let simmer on lowest heat,shaking occasionally.
 when carrots are shiny and water reduced to syrup-Ready to serve -in serving 
 dish garnish with parsley or mint .
