Champignons de Paris:[Paris Mushrooms]
8oz peeled ,sliced Button Mushrooms.
2tbsps. Olive Oil
Juice of 1/2 Lemon
Salt & Freshly Ground Pepper
1 Bay Leaf
1 tsp. French Mustard
Chopped Parsley.
Place mushrooms in pan [with lid] pour over olive oil ,strained lemon juice,then add
bay leaf and seasoning.cover with lid -cook over high heat for 10 mins.Remove from
heat -allow mushrooms to cool in own sauce.Transfer to serving dish.
Stir French Mustard into sauce and strain this over mushrooms after the seasoning has
been tried.Scattter finely chopped parsley over before serving well chilled.
