Boeuf Bourguignonne:[Beef in red Wine]
2&1/2 lb.-3lb. Chuck Stewing Steak[diced in cubes]
1/2 pint Red Wine
12 Button Onions
3oz. Butter& little oil for frying
Flour
Bouquet Garni
Bacon
Sliced Mushrooms
Triangles /small rounds of fried bread.
Marinate the beef cubes in red wine for at least 3 hrs. Fry onions in butter & little olive oil
till light golden .Toss diced beef [when strained from wine] in seasoned flour and fry till firm
and brown on all sides.Place the onions & meat in an ovenproof dish.Add flour to fat in which meat was fried & add this to the wine in which it was marinated.stirring all the time with a wooden spoon.Cook together for a few mins ,then add a bouquet garni,then pour over meat & onions.Now add just enough water to cover meat & bake in mod.oven for 3 hrs.checking from time to time that there is sufficient liquid & that the meat is not sticking to the bottom.Check seasoning .Remove bouquet garni in last stages of cooking ,Fry several slices bacon & Saute sliced mushrooms-set aside .Make triangles or rounds of fried bread .When ready to serve ,Transfer meat to an oval server ,Garnish with fried bread topped with bacon and mushrooms.
