Thought for the Day
A pint of examples is worth a gallon of advice.
 
This is taking forever to get to the screen this morning.
Have no idea what the issue is BUT it seems to not only be me having "issues"...At one point yesterday, it took over 20 minutes for a "page to come up"...then it was WHITE!
People are saying they have sent me e-mails BUT I am not getting anything...didn't even get the garbage weekly announcements from the groups.(Gad! I hate those; even when I checked to "never" recieve them...I get them!)
 
Just heard that guitarist, Jeff Healy is dead at age 41. He had cancer! What a shame & such a loss!  He lost his sight at the age of 1 year, due to the cancer. They said he had "lost his life-long-battle with cancer". How much of a life is 41 years?
 
Friday morning last week, another Friend/client passed away. Pretty soon......I may be outta business! Never thought that what I do... could be classified as depressing!
 
Anyway...the roads here in areas they say, are covered in black ice! Makes me wanna jump back into bed and cover up my head! It was a sorta "tedious walk" this morning, when the Ladies & I were out.....& they say Spring is just around the corner....!
 
Better run...have place to go and posts to post!

Squash Casserole

Metric Ingredient Imperial
4 large yellow squash 4
1 small onion, chopped 1
125 ml water 1/2 cup
1 garlic clove, crushed 1
125 ml cream cheese, at room temperature 1/2 cup
125 ml cheddar cheese, shredded 1/2 cup
1 large egg, lightly beaten 1
- salt & pepper to taste -
6 soda crackers, crushed 6
In a large saucepan; add squash, onion, water and garlic. Bring to boil. Reduce heat, cover, and simmer until squash is tender, about 12 minutes. Drain well in colander. Return vegetables to saucepan and mash with potato masher. Stir in cream cheese, three quarters of grated cheese, egg, salt and pepper.

Pour into lightly greased baking dish. Mix crushed crackers and remaining cheese; tossing to combine. Sprinkle crumbs on top of casserole. Bake in preheated 350 F (180 C) oven for 30 minutes.

Serves 6

Thought for the Day:....
It's our conscience, not our mattress that has the most do to with our
sleep!

Did ya remember to turn your clocks ahead?

"Our Walk" this morning was cool and labor-intensive, walking along the un-plowed/cleared sidewalks.

The "Old Lady" likes to roll...she'll walk a few steps and then just "drop & roll"..lol

"The Pup",(almost 9 yrs!)...likes to eat fresh snow....almost to the point of making her "faint"! Dumb dog! Her side cave in and I hollar!...lol

We 3.....sure must be an entertaining site to see coming along....me with so many clothes on.......(white coat & 70 pounds overweight).....I must look like a walking snowball & then "The Hounds"!..& their antics......hehehe

For those of you that need coffee....

The sun is shining here in Toronto and it is blinding!

.maybe....if I whisper maybe we won't have anymore snow?....lol

We sure got dumped upon since Friday!

Driving was terrible, as expected yesterday.

I had to go out...to the plaza, had no choice about that.(decided NOT to go to work tho)[I love being The Boss!....lol]

I felt so sorry for the young guy that has the contract for snow removal & drives the plow here where I live. People were parking in the driveway...just abandening their vehicles....If I was behind the wheel of that plow..they would had to wait until about July when the snow had all melted to get their vehicle out!!!!(course wouldn't o' bin my fault, have to plow the easiest way for the "wind-rows" flow!!!!!..)

Soooooooo I made another one of those "Executive Decisions" today.....ain't going to work!

We were supposed to meet my bil & his lady friend for dinner last night,(his b-day is/was yesterday! I don't remember! his daughters' is either the 8th. or the 11th...whatever!....one she is, he is the other!!!!.lol)

When I looked out the balcony door at 4 p.m. and had trouble seeing the railing that is about 5-6 feet from that door, because the snow was coming down so hard & the wind was blowing too....

I said I ain't going no-where!!!

Maybe we will try for today!

The Restaurant,(Windfields') will still be there, I'm sure and they will still have "The Ribs" I love!

What are your plans for today?

Anything  "special"?.....besides shoveling?...lol

I think I have yapped enough this morning so will go and hunt up a "share" for ya'll....right after I say....

From The Kitchen!...

Banana Nut Salad

1 egg
3/4 c. sugar
3/4 c. milk
2 tbsp. flour
2 tbsp. vanilla
1/4 tsp. salt
1 bunch of bananas
1 c. chopped walnuts
lettuce

Cook egg, sugar, milk, flour, vanilla and salt over medium heat until it
comes to a full boil.

In a medium size bowl, slice bananas and add
chopped nuts.

Pour dressing over bananas and nuts.

Mix well, serve hot
or cold.

Sour Cream Pie Crust recipe

I  have used this recipe for piroshki, pies, and turnovers.  It is excellent, makes a very workable dough, and is not difficult.    It’s a perfect, pastry-like dough for making "pies for one". Have you seen those little plastic gizmos' that ya can make perogies with...well use them to make a "pie for one"!!!

3-1/2 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 tablespoon granulated sugar
1/2 cup cold butter
2 large eggs
1 cup sour cream 

1. Sift the flour, baking powder, salt, and sugar into a bowl.  Cut the butter into 1/2-inch cubes and add it to the flour.  Cut the butter into the flour with a pastry knife until it is the consistency of oatmeal.

2. In another bowl, whisk the eggs and sour cream together until it is smooth. 

3. Add the egg mixture to the flour mixture and stir into a mass.  Remove the dough ball to a floured counter and knead just until smooth so as not to develop the gluten in the flour.  Cover the dough ball and chill it in the refrigerator for an hour.

Ham Sauce with Mustard Pears
1/3 c. sugar
1/3 c. prepared mustard
1 c. vinegar
1 1/2 c. juice drained from 1 lg. can pear halves

Bring sugar, mustard, vinegar and pear juice to boiling point. Pour over pears. Let stand in refrigerator several hours or overnight. Place pears around a baked ham or a thick slice of ham.

LEMON PINEAPPLE CAKE
1 box lemon cake mix
1 box lemon instant pudding
3/4 c. vegetable oil
10 oz. lemon-lime soda
6 eggs
1 1/2 c. sugar
1 sm. can crushed pineapple
1 stick of butter
1 sm. pkg. shredded coconut

Combine cake mix, pudding mix, oil, lemon-lime soda and 4 eggs in a bowl mixing well. Pour into a greased and floured 9 by 13 inch cake pan. Bake at 350 degrees for one hour or until golden brown.

GLAZE
Combine sugar, pineapple, and butter in saucepan. Beat remaining 2 eggs in small bowl. Add to pineapple mixture. Cook until thickened stirring constantly and cool. Pour glaze over cake and sprinkle with coconut.

APRICOT NECTAR CAKE
1 box cake mix (yellow)
3 eggs
1/4 c. oil
3/4 c. apricot nectar

Mix cake mix, oil, and apricot nectar. Beat eggs and add to mix. Bake in slow oven 1 hour.

ICING:
1/2 c. apricot nectar
1 1/2 c. powdered sugar

Mix and put on cake for icing.

(I have a client that buys one of these "coffee cakes" from the local grocery store...every week! I believe the cost is around $8-9 !!!! Why not make this?)

CINNAMON BUNDT CAKE
 1 pkg. yellow cake mix
1 pkg. vanilla instant pudding
3/4 c. Wesson oil
3/4 c. water
4 eggs
1 tsp. vanilla

Mix together at high speed for 8 minutes. Grease bundt pan well with pastry brush. Sprinkle 1 cup nuts in pan; spread around. Nuts will cling to grease! Place 1/3 of batter in pan; sprinkle with cinnamon and sugar mixture. Place another 1/3 of mixture in pan; sprinkle with cinnamon and sugar. Place remaining 1/3 of batter in pan. Bake at 350 degrees for 1 hour or more.
