Apricot & Ginger: This is a lovely fresh tasting jam, can be made at any timeof the year .because tinned pulp is used. Grate rinds of 3-4 lemons ;Cook in 1 cup of water for about an hr. Then put in a preserving pan : 7lb Apricot Pulp. 7lb Sugar, juice of Lemons,cooked Rind, 1/2 lb Preserved Ginger [chopped fine]. Bring to boil,continue until thick [about 15 mins].
