Sweet Onion Pudding
2 cups whipping cream
3 ounces freshly shredded Parmesan cheese
6 large eggs, lightly beaten
3 tablespoons all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 cup butter or margarine
6 medium sweet onions, thinly sliced
Stir together first 3 ingredients in a large bowl.
Combine flour and next 3 ingredients; gradually
 stir into egg mixture. Set aside.
Melt butter in a large skillet over medium heat;
add onion, and cook, stirring often, 30 to 40 minutes
or until onion is caramel colored.
Remove onion from heat.
Stir onion into egg mixture; spoon into a lightly greased
 13- x 9-inch baking dish.
Bake at 350*F (175*C) for 30 minutes or until set.
Makes 8 servings.

Whole Grilled Onions:
Use delicious sweet onions, such as Vidalias, in this easy recipe.
INGREDIENTS:
4 large sweet onions
salt and pepper
butter
PREPARATION:
Remove any dry skin and stem from onions. Working from the top, core the onions, leaving a cavity about 1 inch across and almost through to the bottom of the onion. Salt and pepper the onion cavities, then fill with butter.
Sprinkle onions all over with salt and pepper; wrap in foil, gathering at the top and twisting to seal. Cook in closed grill in for about 1 to 1 1/2 hours over medium indirect coals. Open foil 10 minutes before serving and leave on the grill for more smoked flavor.

Creamed Onions :
for holiday dinners. Small white onions or a mixture of
small white and purple onions are cooked and served
in a Cajun-spiced white sauce.
INGREDIENTS:
1 1/2 to 2 pounds small white onions, peeled, or
mixture of small white and purple onions
1/2 teaspoon salt
2 tablespoons butter
2 tablespoons flour
1 1/2 cups half-and-half or whole milk
1/2 teaspoon Cajun seasoning, or to taste
1/4 teaspoon paprika
salt, to taste
2 teaspoons chopped fresh parsley
chopped fresh parsley, for garnish
PREPARATION:
Place onions in a medium saucepan. Add 1/2 teaspoon of salt
and enough water to cover. Bring onions to a boil;
 cover and cook 20 to 25 minutes, until tender.
Drain and reserve the cooking liquid; set onions and cooking
liquid aside.
In the same saucepan, melt butter; blend in flour.
 Gradually add half-and-half or milk; cook, stirring constantly,
 until mixture thickens and begins to bubble.
Stir in Cajun seasoning and paprika. Taste and add salt
and pepper. Add some of the reserved liquid to thin the sauce,
if too thick. Add onions to the sauce; heat through and serve.
Serves 4 to 6.

Alternatives to just plain creamed onions .
*Creamed Onions with Eggs :
Add some boiled eggs chopped in half lengthwise .
Mix with onions and thickener. pour into dishes and eat with chinese noodles
or rice  . I prefer noodles .
 
* Creamed Curried Onions :
Add a small amount of your favorite curry to onions as they are
cooking, then add eggs at end .
