Summer Squash
2 lbs yellow squash(sliced)
1 cp water
2 sm. onions(minced)
2 Tbs butter
1 cp Ritz cracker crumbs(divided)
11/2 cp grated cheese
2 eggs(beaten)
1/4 cp Baconbits
1 2oz jr diced pimento(drain)
1/4 tsp salt
1/4 tsp pepper
Bring squash & water to a boil.Cover, reduce heat &
simmer for 10mins. Drain & mash, set aside.
Saute' onion in butter until tender.
Combine onions, squash, 3/4 cp crackercrumbs, cheese &
remaining ingredients.
Spoon into a lightly greased 2qrt casserole dish.
Sprinkle on remaining crackercrumbs.
Bake @ 350 for 45mins.
