Potato Pancakes:[1] Yield: 6-8 servings Ingredients: 1 16oz. Reser's Creamy Deluxe Mashed Potatoes* 1 large egg, beaten lightly 6 tablespoons all-purpose flour 1 small onion, chopped Salt and pepper ½ C vegetable oil, for frying Instructions: Combine the potatoes and the egg in a bowl and then stir in the flour thoroughly. Add the chopped onion and salt and pepper as needed. In a large heavy skillet, heat the oil over moderately high heat until it is hot but not smoking. Fry heaping tablespoons of the potato mixture, flattening them slightly with the back of the spoon, for 1 minute on each side, or until they are golden brown. Drain on paper towels if necessary.
