Remove tops from peppers, take out seeds and wash. Place in boiling water, making sure they are submerged, turn off burner, cover and let stand for 5 minutes. Drain thoroughly.
Mix remaining ingredients thoroughly and stuff peppers, replacing the tops. Place in a casserole dish, cover with saran wrap, place in microwave, and cook on medium for 9 minutes. Now my microwave is 750 watts. you may have to lessen or increase the time depending on the wattage of yours. A nice option is to add mushrooms to meat mixture.
