Ingredients:::
1/2 cup Brown Rice (or reg. long grain)
2 ea. 13 3/4 oz cans - Chicken Broth
3medium carrots, sliced
3 medium stalks, celery, sliced
5 oz washed fresh spinach, (get the sand out)
8 ea lean meatballs, sliced (?) or Smoked Sausage (?)
Some shredded Parmesan (optional)
Prep:::
In 1 qt saucepan, heat 1 cup water to boil.
Add rice, heat again to boil, reduce heat to low, cover & cook 15 or so minutes until rice is tender ~ or ~ use Instant.
In 4 qt saucepan, heat chicken broth & 2 cups water to boil. Add carrots/celery. Reduce heat & cook 5 ~ 7 minutes, til vegs are tender. Stir in fresh Spinach & meat, heat thoroughly.
Serve it w/Parmesan ~ not my receipe, but sounds good>>>>>
