RUSSIAN HOT POT:


Ingredients

2 Cups water
2 beef boullion cubes
1 lb. thin skinned potatoes (scrubbed not peeled) cut into 1/2 inch chunks
1 lb. green cabbage (cored and cut into chunks)
1 medium onion (peeled and quartered)
1  16 oz. can diced tomatoes
1 1/2 lbs ground turkey (ground round will do)

Procedure

Bring water and boullion to a boil, in large pot over medium heat.
Add potatoes, then cabbage, and onion, then tomatoes. Add the meat crumbling it. (do not precook meat)  Boil about 30 seconds, stir to mix well. Cover, reduce heat and simmer for 30 minutes, or till potatoes are tender.
Serves 4 and is great with warm russian or french bread.
