Ingredients

1 c. copped onion 3 lb. shrimp, peeled and deveined
6 green onions, chopped 1 small bay leaf
1/2 c. chopped bell pepper Tabasco, salt and pepper (to taste)
Procedure
In a skillet, melt butter and stir in flour. cook, stirring constantly, until this is a rich brown. Add the vegetables and cook until tender. Stir in the water, shrimp, parsley and seasonings. Simmer, uncovered for 20 minutes or until the shrimp are done. Serve over hot rice. Serves 4 - 6.
