- Beat angel food mix and water as per instructions on box
- Mix spice into pumpkin
- Fold pumpkin into batter until completely blended.
Bake in angel food pan, 1 x 13 pan or 18 muffin cups in a 350 oven for about 50 minutes on bottom rack.
This does not rise as high as the regular angel food but is about 3/4 way up the pan. It is a nice light sponge cake and delicious served with ice cream or cool whip [I used whipped cream].
*Note: you can mix the pumpkin into water and beat for the 1 1/2 minutes as directed for cake but it doesn't rise quite as high but was still very good.
