Hoppin' John
1 tablespoon cooking oil
1/2 cup chopped onion
I/2 cup chopped ham
1 can black eyed peas, undrained
3 shakesof Tabasco hot sauce
1 and 1/2 cups cooked brown rice
Saute onion and ham in oil til onion is transparent but not browned.
Stir in Tabasco and blackeyed peas.
Heat til very hot.
Stir in hot cooked rice.
Serve immediately with cornbread and sliced onions and a green salad.
Can be reheated in microwave but will be much thicker.
Still tastes good.
