Another quick and nutritious treat....
One box of couscous (my flock likes Toasted Pinenut)
1 can chicken broth
one cup finely chopped veggies (zuchini, summer squash, red, yellow, green, orange bell pepper, kale, or whatever you have available)
2-3 dried hot peppers, chopped
Have ready in a bowl, any chopped veggies to be used.
In medium saucepan, heat chicken broth, flavor packet from couscous, and chopped hot peppers. Bring to a boil. When boiling, remove from heat, add couscous and cover. After 5 minutes liquid should be absorbed. If not give it a couple more minutes. Stir in veggies. When cool, package in small quantities. I find the snack ziplock bags perfect for this. Store in freezer. Will keep a good 6-8 weeks.
