Creamy, Cheesy Mashed Potatoes
Potatoes are the ultimate comfort food and are quite healthy with only 100 calories per medium-sized potato, zero fat and over 40% of the recommended daily requirement for vitamin C. It’s the toppings, mix-ins and cooking methods that take potatoes from slim to chubby. Some simple substitutions like low-fat sour cream and fat-free milk help reduce both saturated and total fat. New products including turkey bacon offer similar smoky flavor and richness found in traditional bacon with a lower fat and calorie content. Fat-free cheese isn’t our favorite so we simply reduced the amount of regular cheddar cheese called for in the traditional recipe. All of our tricks and swaps reduced saturated fat from 9 grams to 4.5 grams, total fat from 16 grams to 8 grams, and overall calories from 280 to 160. Top of the tater to you! |
Serves 8
2 c. organic chicken broth
3 c. water
3-4 Yukon Gold Organic Potatoes, quartered
1/4 c. Fat Free Milk
2/3 c. low fat sour cream
1 c. cheddar Cheese, shredded
1 clove garlic, minced
1 bunch scallions, chopped
sea salt and black pepper to taste
3 strips turkey bacon, cooked and chopped
Heat chicken broth and three cups water to a boil. Add potatoes and cook until tender. Mash potatoes, and stir in milk, sour cream, three-quarters of the cheese, garlic and scallions. Add salt and pepper to taste. Spread in a baking dish. Sprinkle with bacon and cheese. Bake for 15 minutes, or until the cheese melts.
