German Cucumber Salad
3 large cucumbers
Salt
1-2 teaspoons chopped fresh dill
1 teaspoon sugar
1 teaspoon black pepper
1Tablespoon white vinegar
1/2 Cup Sour Cream (I use the low cal sour cream and it tastes just as good)
Peel and slice the cucumbers into paper thin slices or as thin as possible. Place in bowl, salt lightly and set aside in the refrigerator or at least 20 mins to allow the salt to pull the water from the cucumbers. Remove from the refridge, drain excess water and gently wring the cucumber slices with your hands to remove more moisture. Add vinegar, sugar, black pepper, dill and sour cream. Mix well and enjoy!!
