Cabbage and Potato Casserole
2 Tbs butter 2 medium onions, chopped 1 small cabbage, shredded 2 green apples, thin sliced 1-1/2 tsp white wine vinegar 1-1/2 tbs sugar 1 tsp salt 1/4 tsp pepper 2 cups veggie broth 1/2 cups leftover mashed potatoes In large skillet, over medium heat, melt the butter and saute onion til golden brown. In crockpot, make alternate layers of cabbage and apple. Add the onion, vinegar, sugar, salt and pepper. Mix the broth into the mashedpotatoes to make a thin sauce and pour it over the cabbage.
Cover and cook on high setting for 3-4 hours.
Serves 6.
