1 mango, peeled, seeded, and cut into 1/4-inch pieces
1 peach, peeled, seeded, and cut into 1/4-inch pieces
2 kiwi fruit, peeled and cut into wedges
3 tablespoons finely chopped red
onion
3 tablespoons fresh squeezed lime juice
1/4 teaspoon salt
1/3 teaspoon crushed red pepper flakes
1 teaspoon sugar
1 tablespoon finely chopped fresh
mint
leaves
1 tablespoon finely chopped fresh
cilantro

In a medium bowl, combine mango, peach, kiwi fruit, onion, lime juice, salt, red pepper, sugar, mint leaves, and cilantro; adjust flavors to taste. Cover and refrigerate at least 2 hours or overnight

Variation: Substitute 1 papaya or 2 large or 3 medium peaches for the mango.

Yields 1 cup.
