Sugar Free Granola
3 1/2 cups rolled oats 1/2 cup walnuts, chopped 1/2 cup almonds, finely chopped 1/4 cup flaxseed, ground 1/4 cup oat bran 2 T sunflower seeds 2 T pumpkin seeds, ground or whole 1/2 tsp kosher salt 1/2 tsp stevia powder 1/2 tsp cinnamon 1/2 cup unsweetened applesauce
Preheat oven to 275. Mix all dry ingredients (pulse nuts in food processor for easy chopping). Add applesauce to dry mixture in 2 to 3 portions, thoroughly mixing before adding next portion to evenly distribute throughout. Spread on nonstick half sheet pan or rimmed cookie sheet. Bake for 1 hour 15 minutes total, stirring every 15-20 minutes.
Add dried or fresh fruits as desired such as raisins, dried strawberries, dried cherries, dried blueberries, fresh peaches, bananas, whatever you like! |
