Soft Honey Mead
For those who enjoy the taste of Honey Mead but prefer not to drink alcholol, this is a tasty solution. Honey wines have been known since the time of Hippocrates and were often used as a base for medicinal liquids to ease the bitterness of some folk remedies.
- 4 Cups of Spring Water
- 1 Cup Honey
- 1/2 tsp. Nutmeg
- 1/2 tsp. Ginger
- 1/4 tsp. Cinnamon
- 1 Lemon, Sliced
- 1 Orange, sliced
Bring the water, Honey, Nutmeg, Ginger and Cinnamon to a boil in a medium saucepan. (For the best flavor. use a stainless steel or non-metalic pan.)
Stir until honey is dissolved; the heaviness at the bottom of the pan should disappear.
Use a wooden spoon to skim off the film that rises to the top until the surface is clear.
Add the Lemon and Orange slices , squeezing as they are placed in the water.
Cool completely
Strain.
Pour into a bottle. Store in refrigerator.
YIELD: About 4 Cups.
Note: Some people find this recipe too sweet. Stir in the Honey a little at a time until the mixture reaches desired sweetness.
