Fresh Raspberry Spritz
  Ingredients

2 half pints fresh raspberries 
 2 tablespoons sugar 
 1 tablespoons fresh lemon juice 
 Seltzer water, well chilled 
 White grape juice, well chilled 
 Fresh raspberries or mint sprigs (optional)

 <DIR> 
Puree the raspberries, sugar and lemon juice in a food processor or blender. (It should make about 2 cups.) Push through a fine sieve to remove the seeds. The puree can be stored, tightly covered, in the refrigerator for 1 to 2 days or frozen for up to 3 months. To serve, place 1 tablespoon of the puree into the bottom of a champagne glass. Fill half with seltzer water and half white grape juice. Garnish glass with raspberries on a small plastic straw, or mint leaves, if desired. Make sure the seltzer and grape juice are well chilled. In fact, keep them on hand in ice buckets filled with ice.
