Louisiana Crab Balls
2 pounds crabmeat
2 eggs
Peanut oil (I'll substitute canola oil for this)
1 cup Italian bread crumbs
Flour
Mix the crabmeat, eggs, and bread crumbs.
Make into small balls the size of small meatballs.
Roll in flour.
Fry in the oil until golden brown.
Drain on paper towels.
Stick toothpicks in each ball and serve with tartar sauce or ketchup.
