Baked French Toast with Peaches
10-14 slices thick sliced, italian or french bread
tub of cream cheese, softened
15-oz can peach slices, drained
1/2-3/4 cup chopped pecans, optional
3 eggs
1/4 cup milk
1/3 cup maple syrup
2 tbsp butter or margarine, melted
1 tbsp sugar
1 tsp cinnamon
1 tsp vanilla
Spread cream cheese on both sides of bread slices. Place bread on a greased 9x13-inch baking pan. Prick each slice of bread 3-4 times with a fork.
Top bread with peach slices & sprinkle with chopped pecans if desired.
In a mixing bowl, beat eggs, & then combine with milk, maple syrup, butter, sugar, cinnamon, & vanilla. Whisk together. Pour egg mixture over bread.
Bake at 400~f for 15-25 minutes, or till egg mixture is set.
Serve with syrup, if desired.
Makes 6-8 servings.
