Chocolate-Dipped Maple Logs
1/2 cup butter, softened
1/2 cup shortening
1/2 cup confectioners' sugar
1 tsp vanilla
2 tbsp maple syrup
1-1/2 cups all-purpose flour
1 cup quick-cooking oats
1/2 teaspoon salt
1 cup semisweet chocolate chips
2 tbsp milk
3/4 cup ground walnuts
In a large mixing bowl, cream the butter, shortening & confectioners'
sugar. Beat in vanilla & maple syrup. Combine the flour, oats & salt;
gradually add to creamed mixture.
On a lightly floured surface, shape dough into 1/2-in.- wide logs. Cut
into 2-in. pieces. Place 1 in. apart on ungreased baking sheets. Bake at
325° for 15-18 minutes or until set & very lightly browned. Remove to
wire racks to cool.
In a microwave, melt chocolate chips & milk; stir until smooth. Dip one
end of each cookie into chocolate, then roll in walnuts. Place on waxed
paper until set. Makes 6 dozen.
