Chocolate Macaroon Cake
2 cups flour
1 cup sugar
1/2 cup cocoa
1 tsp. salt
1 egg ( beaten )
1 & 1/4 cups milk
2 tsp. baking powder
1/2 cup oil
Macaroon filling:
Beat 1 eggwhite till fluffy, add 1/4 cup sugar, beat until stiff peaks
form. Fold in 1 cup coconut & 1 tsp flour.
Spread 1/2 of batter in greased, cocoa dusted tube pan. Smooth macaroon
filling on top, & then top with remaining batter. Bake at 350 for 40-45
minutes. Ice when cold if desired.
