Chocolate Princess Cookies
1 cup (2 sticks) butter, softened
1 cup firmly packed light brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups old-fashioned oats
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1-1/2 cups dried whole cherries
1-1/4 cups good-quality chocolate chunks
1 cup chopped nuts
Cream butter & sugar together with an electric mixer.
Add eggs, mixing well, followed by vanilla extract.
In a separate bowl, combine oats, flour, salt & baking soda.
Add to creamed mixture in several additions.
Stir in dried cherries, chocolate chunks & nuts.
Drop by teaspoonfuls onto ungreased baking sheets, 1 inch apart.
Bake in a 375-degree oven for 10 to 12 minutes or until golden brown.
Yields ~ 2 1/2 dozen Cookies
