Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 Eggs 1 cup Vegetable oil 2 cups Sugar 1 tablespoon Vanilla extract 2 cups Shredded -- peeled zucchini About one medium 2 1/2 cups Flour 1/2 cup Cocoa 1 teaspoon Salt 1 teaspoon Cinnamon 1/4 teaspoon Baking powder
Recipe by: Sue Klapper Preparation Time: 1:00 In a mixing bowl, beat eggs, oil, sugar and vanilla. Stir in zucchini. Combine dry ingredients; add to zucchini mixture and mix well. Pour into 2 greased 8 x 4 x 2 loaf pans.
Bake at 350 for hour or until bread tests done. Yield: 2 loaves.
