WINTER FRUIT IN VANILLA SYRUP
1-1/2 C Water
1-1/2 C Sugar
1/8 tea salt
2 TBLS vanilla extract
1 tea lemon juice
1/2 tea cinnamon
1/2 C dried apricots
1/2 C dried cranberries
1/2 C dried plums
1/2 C dried figs
3 Pears, cored, peeled, and sliced
3 TBLS butter
In a sauce pan, heat water, sugar and salt until dissolved.
Bring to a boil; reduce heat and simmer for 10 minutes.
Stir in vanilla, lemon juice and cinnamon. Add apricots, cranberries,
plums, figs and pears; simmer for 20-30 minutes. Cool to
room temperature; cover and refrigerate overnight. At serving
time, bring to a simmer; stir in butter. Let cool
slightly and serve.
Makes 8 - 10 servings
