Red Eye Gravy: A southern tradition.
Fry 1/2 inch thick ham slices over medium heat,
5 to 6 minutes each side.
Place cooked ham on hot plate.
Add 3/4 cup black coffee to 3 tbsp ham dripping with scrapings (these are the redeyes) and bring to a boil. Serve gravy over ham or biscuits. Ok to substitute water for coffee
